Our story

120 years of tradition and taste Being a restaurateur isn't just a trade — it's a legacy carried in the heart, passed down in our family from generation to generation since 1900. It all begins with the grandfather of today's owner — İlyas Kavuranlar. It was he who, in Turkey, first created the original recipe for what is now the famous Edirne liver — a dish that to this day stands for craftsmanship and tradition. The torch then passed to his son Mustafa, and after him to our İlyas, who carries the work forward with respect and dedication. Preparing Edirne liver takes more than an exact recipe — it takes years of practice, patience and heart. Today in Bulgaria, only at Restaurant Brazilia can you taste this authentic flavor, made the same way it has been for more than a century. And Edirne liver is only the beginning — our menu combines the richness of tradition with flavors to satisfy even the most discerning taste. For us there is no greater reward than a guest who leaves smiling and happy. Thank you for being part of our story.
